Christmas Light Cupcakes Recipe

There’s a lot to be excited about during the holiday season, but one of my favorite things about this time of year is getting to eat so many delicious treats. Although I will always be excited about decorating Christmas cookies or cutting myself a slice of pecan pie, it’s also exciting to see a fresh and new dessert — especially one that’s just as bright and cheery as the holidays themselves.

If you’re looking for a new idea, you’ll want to try your hand at these adorable Christmas Light Cupcakes by Baked Bree. Using just chocolate cake mix, vanilla cream frosting, some black frosting, and M&M’s, you can create your own mini cupcakes that are teeming with the holiday spirit.

Christmas Lights Cupcakes Recipe

Ingredients

Cupcakes
  •     1 1/8 cup all-purpose flour
  •     1/2 tsp salt
  •     1 1/4 tsp baking soda
  •     1/4 cup unsweetened cocoa powder
  •     2 tsp vanilla extract
  •     1 large egg
  •     3/4 cup granulated sugar
  •     1/2 cup salted butter, melted
  •     3/4 cup milk of choice
Frosting
  •     4 oz salted butter, softened
  •     2 1/2 cups powdered sugar
  •     4 oz cream cheese, softened
  •     1 Tbsp vanilla extract
Decorations
  •     mini m&ms
  •     black icing gel

Instructions

  1. Preheat the oven to 350˚F. Line a muffin pan with paper liners and set aside.
  2. In a medium bowl, mix together the flour, 1/4 cup cocoa powder, baking soda and salt. Set aside.
  3. Cream together the sugar and the egg. Add in the vanilla, milk and butter until fully combined. Slowly add in the dry ingredients to the wet ingredients until fully incorporated.
  4. Divide the batter evenly into the prepared muffin pan, and bake in the preheated oven for 15-18 minutes, or until a toothpick inserted comes out clean.
  5. To make the frosting: Cream together the butter and cream cheese on high until light and fluffy. Reduce the speed, and add in the icing sugar and vanilla. Mix until fully incorporated. Place in a ziplock bag or a piping bag, and pipe the frosting onto the cupcakes.
  6. Decorate the cupcakes with the black icing gel and m&ms to make it look like Christmas lights.
