SIMPLE BLTA CHICKEN SALAD



A favorite lunch in our house is chicken salad. It is something that can be made so easily either with leftover chicken, rotisserie or even canned chicken. It use to be that we stuck to the classic, old fashioned way of making chicken salad. Chicken, mayo and celery. Years and years ago I remember seeing waldorf style chicken salad on a menu and thinking to myself “that is so crazy! Who puts all that stuff in chicken salad?”.  It wasn’t until I expanded my palette grew up that I realized there was a reason for all of those mix ins.  Flavor!  Sweet tart, savory, crunchy and more. The different ingredients touched each part of taste buds creating an amazing flavor combination. From that point on I started experimenting with different flavor profiles for our chicken salad.
This recipe is great for everyone.  Eating the keto way? This is keto approved!  Low carb? Approved!  Just like chicken salad? Check! Approved.  Most people don’t realize that a recipe can be keto or low carb and not have anything “funky” added to it or main ingredients omitted from it.   This recipe simply is a mix of amazing ingredients combined together to mimic a BLT/Chicken Salad combo. We added avocado for fun!

BLTA Chicken Salad

Our blta chicken salad is the perfect mash up of the classic BLT with avocado and chicken salad!

Ingredients


  • 1 rotisserie chicken shredded and chopped
  • 5 slices cooked bacon chopped
  • 10 cherry tomatoes quartered
  • 1 avocado diced
  • ⅔ cup mayonnaise
  • ¼ tsp each garlic & onion powder
  • Salt & pepper to taste
  • Lettuce for wrapping
  • Celery seasoning to taste optional


Instructions


  1. In a large bowl, combine all dressing ingredients. Mix well.
  2. Add chicken, tomatoes, bacon and avocado. Stir to combine.
  3. Wrap in lettuce, enjoy!
